The heart of our brewery: a 7HL lactic acid tank

After 18 months of planning, staring at spreadsheets and pacing the halls, our new brewhouse is installed and is ready for commissioning – what a relief at last! Defining our vision: it’s all about the big picture.

It has been ages since the last blog and plenty has been going on behind the scenes: we are now in our site (91 Whitby Road, BS4 4AR), fit-out is underway, our equipment is due to arrive next week, the team has started, and we even got a little delivery van to ferry some kegs around come August. Beer epiphanies.

We’ve been very quiet the past few weeks as we have been fully devoted to the project: trying to get the builders organised, ensuring the brewery equipment is on schedule, trying to get the site lease signed (it’s perpetually “two weeks away” it seems!).  We’ve also gone through a heap of CVs and had plenty of interviews: we have finally started hiring a few staff which is exciting – soon we will have a few people join in the fun. Stopping to think.

The headline photo of this blog was taken from our hotel in Hong Kong where  Annie and I stopped whilst en route to London back in December 2012.  We had no idea at the time that it would be the first stop of many along the way to building a brewery. How did we get here?

My name is Alex Troncoso, or Alejandro for those who know me well.  I wanted to be a brewer since I was 18 years old and finally achieved this feat at the age of 29.  After graduating as a chemical engineer I had numerous jobs I disliked, did hundreds of homebrews, enrolled myself in a Graduate Certificate of Brewing, joined the Institute of Brewing and Distilling, completed my Diploma in Brewing, and over the years probably got rejected for something like 20 or 30 jobs in the brewing industry.   I finally got my break at the age of 29, after seven years of continually applying for brewing jobs, and being rejected for all except this one, at a small brewery…
