A Sea of Possibilities

At the end of last year we were thrilled to invite James Rylance from Ideal Day Family Brewery to join us on an exciting collaboration brew for our first special release of 2024. Drawing influence from our shared love of Belgian-style beers, Sea of Possibilities is a hazy 4.5% Ardennes-style Pale Ale with a classic fruity Belgian yeast character.

 

Regenerative Agriculture & Brewing

Inspired by Ideal Day’s focus on supporting regenerative agriculture, a type of farming that restores natural ecosystems in the soil, we sourced YQ Wheat from Somerset-based Gothelney Farm, who use these techniques to promote genetic diversity within their plants and crops. YQ wheat was first discovered in 2000 and is the result of cross-breeding a variety of seeds, mixing grains that have a high yield with those that a high protein and gluten content (Yield: Quality). The result of this is a crop more resilient against pests or disease and with increased tolerance to the stresses of varying growing conditions.

Our Ardennes-style Pale Ale starts with a base of Pilsner and Cara malts before adding the YQ Wheat for a subtle haze and soft mouthfeel. Hopped with Magnum, Kazbek, plus a healthy dose of Tango hops from our pals at Barth Haas X, giving notes of grapefruit and passionfruit, and complimented by the classic Belgian yeast character. Utterly delicious!
