You know things are getting deep when we are pondering the wisdom from the humble fortune cookie, but here we are!
At Lost and Grounded we LOVE dialing in our beers to be their best: for Keller Pils it’s about the brewhouse and keeping the yeast happy, for our IPL we have continually evolved the grist to get the balance just right, and for our Belgian-style beers we have been on a quest to find the right yeast strain with each one having its own idiosyncrasies – currently we are on our fourth, so wish us luck!
In 2022 we are focusing on one of our fave Belgian-style beers, Hop-Hand Fallacy, evolving it into a Witbier. Can’t say we make it easy on ourselves, but we just can’t help singing the classics!
Originally described as a “Farmhouse Ale”, this beer always straddled the line between Saison and Witbier, with the name a play on the fact the beer is predominately leaning on spices for aroma, rather than hops. Over time it has become more closely aligned with Witbier than Saison.
Our new Witbier has the original base of Pils malt and 15% oats boosted by way of 40% wheat in the grist, and we also modified the mashing, fermentation and maturation regimes to do the style justice. The result: a beer with a soft, pillowy mouthfeel, low bitterness, subtle glowing haze, and citrus notes from dried bitter orange peel and freshly ground coriander added to the kettle.
We love how the aroma of the Witbier is a delicate mix of spicy, herbal, citrusy notes with none boldly standing out, the body soft and creamy without being cloying or heavy. The flavors and aromas come together to form a zippy refreshing beer with a citrusy fruitiness and slightly dry finish. Flavours waltzing in the glass like dancers in the Grand Ballroom, leaving just a hint of beautiful memories lingering….
We CANNOT WAIT to drink some of this in the Springtime sun, daydreaming of the summer holidays ahead. The first batch is packed and ready to go, and it is tasting absolutely delicious. This amazing rendition of a Witbier is available from Monday 31st January in both 440ml can and 30L keg.
